He's great with horses. Loves horses, really cares about them, takes good care of them while they're with him. There are times in the books where he has to really push his horses to their limits, taking them on hellrides through Shadow, which is disorienting for any creature, let alone something like a horse that has no way of understanding what's going on, and he always feels bad about it, but ultimately he has to do what he has to do, and the horse is not much more than a tool to get him where he needs to go. He forms attachments to a few horses in canon (Star, Drum, I forget the names of the others), but doesn't like... mourn them for a long time when they ultimately die or get stolen or move on. And there are several horses that he uses but doesn't name or form any particular attraction to.

Beyond that, I don't think animals have ever been that important to Corwin. Neither Corwin nor any of his siblings have any pets or anything, unless you count his brother Julian's monster horse Morgenstern and hell-hounds, with whom he patrols the forests surrounding Amber. But again, they're means to an end for Julian, rather than anything he has affection for.

TL;DR Corwin likes horses, and will tolerate most other animals, but doesn't really care about them.
